       Scray Cheese factory first opened in 1924 by Edward Scray.  The factory specialized in Gouda, Cheddar, and butter. The small factory brought in milk from local farmers by way of milk cans on horse and buggy. Edward created his own cultures and used an open fire underneath the vats to heat the milk. He used wooden hoops to press the cheese into shapes and hand salted each piece. Edward passed his knowledge and expertise to his son, Edgar in 1948.

        Through the years, Edgar made many changes to the factory to create the highest quality cheese and butter. He continued to master the craft of producing his own cultures and eventually was able to make additions to the factory.

        Edgar’s son, Jim, decided to take over the factory in 1982. He was able to purchase his cultures from Holland, decreasing the risks involved with producing cheese.  Jim continued to emphasize quality in his cheese making process, focusing on Gouda and Cheddar.      

       The factory is currently being passed to the fourth generation to Jim’s children, Ryan and Kayla.  To continue the tradition of creating hand crafted cheese, Ryan became a licensed cheese maker in 2009.  Shortly after, the factory went through many changes to increase production.  A third vat was installed in the factory, along with a new silo to hold the excess milk.

       While the renovations for the factory were in the works, Jim’s daughter Kayla decided to open a shoppe connected to the factory to sell her father’s delicious cheese.  Along with the wide variety of Scray’s cheddars, spiced cheddars, Edam, Gouda, and Smoked Gouda, the shoppe offers an array of Wisconsin cheeses and meats, Door County wines, premium ice cream, and local gourmet coffees. The shoppe also has a large viewing window to see the art of Wisconsin cheese making for yourself!

       Scray Cheese is a family owned Wisconsin cheese manufacture dedicated to keep small, local businesses alive.  Their secret ingredient lies within the local farmers they buy their milk from.  Their dedication to provide quality milk throughout the years has helped with the success and continuing growth of their factory.  Happy cows DO come from Wisconsin after all.
