Scray Cheese Shoppe

When you think of Wisconsin, what comes to mind? Cheese!!

Scray Cheese Shoppe offers the Green Bay area and its visitors quality handcrafted Wisconsin Cheese.

Scray Cheese specializes in Gouda/Edam, Fontina, and Cheddar.

Gouda and Edam are the same cheese here in America, they just have a different shape. (Similar to Colby and Longhorn Colby). Scray Cheese originally made their own cultures to make their cheese but they are now more controlled in a lab and sent to Scray Cheese from Holland.  All milk brought into the plant is from local, family owned farms.

Gouda is a semi-soft, creamy, full flavored, nutty, slightly sweet flavored cheese. Scray’s Smoked Gouda is sent to a Wisconsin smoke house to be naturally smoked with oak wood chips. Gouda gets better as you let it age.

Cheddar, also, gets better with age. Squeaky fresh cheese curds are made weekly. Cheese curds are cheddar that has not been pressed into a block and can be left on the counter for 3 days after they are made to “keep the squeak”. Cheddar is a semi-hard, yet creamy cheese that gets stronger in flavor with age. Seasonings are added to the Cheddar to make the different flavors Scray’s carries in store.

In 2012, Scray Cheese started a new venture, making handcrafted Fontina cheese. Fontina is a semi-soft, mild, creamy, slightly sweet flavored cheese. Very similar to Gouda, Fontina is more creamy and is better when enjoyed within 6 months of the make date. Great for melting in a recipe, making fondue, for a cheese tray, or to give a sandwich a little more flavor than a provolone would.

Scray Cheese Shoppe carries over 100 different types of cheese, all Wisconsin made. There are a few imported cheeses available from Holland that are dynamite. Scray’s offers an array of spreads,  specialty Wisconsin meats, local coffee, and premium ice cream. Stop in for a quick bag of curds, or stay awhile and enjoy a coffee or latte while you shop!

Scray Cheese Shoppe first opened its doors in July of 2009.

With a viewing window in the shoppe, customers are able to see the craft of cheese making as well as the cheese makers hard at work! Fresh cheese is made Mondays, Tuesdays, and Thursdays, so if you are looking for delicious squeaky cheese curds, visit on one of these days. (These cheese making days may vary during Holiday weeks).

A drive-thru window is also available, not only for coffee and smoothies, but for cheese!

No problem! Scray Cheese Shoppe now offers online ordering. They still take phone orders, otherwise stop on by to personally choose the cheese needed to be shipped. (Great for Birthdays or “Thank You” gifts!)
